The method

Every batch starts the night before — a slow, cold dough, left to ferment for eighteen hours to build the flavour a rushed bagel never gets.

In the morning, each one is hand-rolled, kettle-boiled and baked to a deep, glossy crust — no shortcuts, no dough conditioners, no shelf-stable additives. Just flour, water, malt, salt, and time. It’s the same method bakers have relied on for generations, done properly and in small batches, so what reaches your table actually tastes like something. If we sell out, we sell out. That’s the trade-off for fresh, and it’s one we’ll always make.
